Try this: Instead of adding milk directly to the potatoes, poach raw garlic in the milk for 5-7 minutes. Boil potatoes. Then once you’ve boiled the potatoes reserve a portion of the water (1/2 to 2/3 cup) and return potatoes to pot. Add butter, milk and poached garlic to the potatoes. Whip. Add in potato water as needed to achieve the desired consistency. Remember that potatoes hold their heat well so you should try to plan on finishing your potatoes 10 minutes prior to serving.
Want more spice flavor, add in fresh chives to the milk and garlic. For a completely different flavor replace the chives with taragon.
